First off, we love Pol Roger NV Brut Champagne. We drink it for birthdays, holidays, Sundays, anytime! It is so polished, dry and sophisticated. We will have full bottles and half bottles on hand at this event. Secondly, we have carried Chappellet for 25+ years. Dad was a big fan; Cyril Chappellet visited the shop many times back in the day to taste new releases. We will taste the 2015 'Signature Reserve' (named for his dad Donn), the blockbuster new vintage. We have 750 ml bottles and limited edition magnums.

Pol Roger Non-Vintage Brut is an impeccably dry, elegant, classic Champagne of Epernay made of 33% Pinot Meunier, 33% Pinot Noir and 33% Chardonnay. Pol Roger is one of the few luxury Champagne firms which is still family-owned, and it was established in Epernay in 1849. Robert Parker who calls Pol Roger his favorite N.V. Serve as an aperitif, or with fresh seafood, especially oysters or pan-seared scallops, caviar spread or Sushi and sashimi. We also enjoy good Champagne with all things fried, like Calamari (but hold the red sauce!). Fried shrimp are a perfect companion.
Opening with expressive notes of blackberry, cherry and cassis, the wine is full-bodied and rich. Hints of chocolate and espresso layer with spicy oak for added complexity. Smooth tannins infused with ripe sweet fruit create a lush, supple texture. Rich waves of berry, spice and herbs create a lasting impression of finesse and structure in this Cabernet. Serve with traditional steaks topped with Boursin cheese for a twist, roast leg of Lamb with rosemary, roasted rack of Venison with sage and shallots with dried cranberry gravy, or with spiced Venison steaks with Red Cabbage Confit and Red Wine Sauce.
