Founded in 1840, Maison Simonnet-Febvre is a traditional Chablis winery and amongst the oldest in the area. Owning vineyards in Chablis, Chablis Premier Cru Mont de Milieu and Chablis Grand Cru Preuses, it was bought by Maison Louis Latour in 2003, and today is led by Paul Espitalié who managed to inspire a new dynamic while keeping its independence by running it as a separate enterprise with its own house style.

At the estate they carry on their historical legacy by being the only winery in Chablis to produce a range of Crémants de Bourgogne. Owning 15 hectares of vineyards in the Auxois area which is halfway between Chablis and Beaune, Simonnet-Febvre is honoring the grandeur of this glorious terroir of Burgundy. The vineyards of Chablis are world-renowned for their white wines with a distinctive fresh and mineral bouquet and an ample, generous and zesty palate. They are all produced from one single grape variety: Chardonnay. The soils of the Chablis appellation are composed of limestone dating back to the Late Jurassic period. The most representative layer is the Kimmeridgian which is very rich in marine fossil deposits.

This Chablis is well balanced and reveals delicate floral and mineral aromas. On the palate, the wine shows the freshness and minerality typical of the appellation. This vintage has a beautiful concentration as well as a beautiful balance making it promisingly age-worthy.  Serve with oysters, shellfish, fish and goat's milk cheeses.
