The Chablis region is located in the northwest of Burgundy, with its own very special ancient soils made of fossilized sea shells, limestone and clay called Kimmeridgean, dating back to the Jurassic era one million years ago. This soil gives Chablis wines their distinctive flavor of mineral, stone and saline, and local winemakers favor dry, clean styles over a heavy, oaky approach. Chablis is pure, elegant and long in the mouth, beginning with flowers and fruit, finishing with freshness and minerality. A perfect match for raw oysters, shrimp, lobster, mussels, clams, scallops, caviar, white fishes, salmon, cheeses, vegetable terrines and lemony chicken dishes, or...simply on its own!!!

The wine has turned out splendidly, offering up a bright and complex bouquet of lemon, apple, dried flowers, a marvelously complex base of minerality, incipient notes of beeswax and a nice touch of orange peel in the upper register. On the palate the wine is deep, full-bodied and very precise, with a great core of fruit, racy acids, superb mineral drive and a long, complex and impeccably balanced finish. RATED 95 BURGHOUND : 'A fresh, pure and more complex nose grudgingly offers up aromas of iodine, citrus confit, shellfish and mineral reduction. Here too the larger-scaled flavors possess a lovely texture with slightly better energy on the powerful, focused, muscular and bracingly dry finish. This is very firm and while there is enough mid-palate fat to allow this to be approached young, it should easily have the stuffing and requisite balance to reward extended cellaring.' 92-95 Domaine Billaud-Simon is an elite domaine in Chablis, founded by Charles Louis Noël Billaud in 1815 at the end of the Napoleonic Wars.
