THESE ARE HALF BOTTLES OF VIN SANTO ~ A TRADITIONAL ITALIAN DESSERT WINE ~ This limited production Vin Santo is a continuation of the long, Tuscan tradition of crafting Vin Santo. Named after Antonio Giamberti da Sangallo, a reknowned Renaissance architect that worked extensively in Tuscany for the de’ Medici family, Fattoria del Cerro's Vin Santo is made of 60% Trebbiano and 40% Malvasia. Made in the traditional manner, hand-picked grapes are dried on reeds in a ventilated loft until they are pressed in January/February and vinified using natural yeasts in stainless steel. Aged in caratelli, small, traditional oak and chestnut barrels, that remain unopened for three years; the bottle is further refined for a minimum of 12 months before release. Look for rich, concentrated notes of orange peel and acacia honey. This has the perfect balance between the natural sweetness and the acid components. Serve with Cantucci Toscani (traditional Tuscan cookies), Cassata Siciliana or Biscotti as dessert or with aged goat cheeses and foie gras. This wine can age for 10-15 years from the vintage.
