Cavicchioli Lambrusco Vigna del Cristo 2016
This top quality Lambrusco is made of 100% Lambrusco di Sorbara, from a 12.5 acre vineyard in the 'Cristo' locality of Sorbara, the original vineyard owned by Cavicchioli family. Sorbara is a naturally low yielding grape variety typically planted in the vineyard in alternating rows with the more vigorous Salamino. Hand-harvested fruit is de-stemmed and crushed and the must and skins are transferred to a temperature-controlled stainless steel tank where they macerate for 3-5 days. Only 50% of the free-run juice then undergoes a secondary fermentation to achieve effervescence. In Italy they have many ways to serve Lambrusco. In the afternoon with light flatbreads, cheeses, salami; for dinner with fish, meat or pasta, or after-dinner with chocolate. Lambrusco has become a chic drink in Manhattan cafe's and bistro's - join the party!!!
