Crafted by a renowned estate in Abruzzo, this de-alcoholised white wine is made of white Italian grape varieties. Through vacuum evaporation column distillation, Zaccagnini removes the alcohol via evaporation and condensation. The wine, taken from the storage tank, enters the column containing a series of cones. The process has two stages: in the first, volatile aromas are captured, condensed, and preserved; in the second, ethanol is removed through a gradual increase in temperature. The aromas are then reintegrated into the wine, resulting in an alcohol content of <0.5% vol or 0.0%. This technology preserves the wine’s natural aromas and original characteristics. A great wine is essential to produce a great de-alcoholised wine.
