Cauru, a wine crafted from a blend of two vineyards on the northeastern slopes of Mount Etna in Linguaglossa (Contrada Alboretto Chiuse del Signor) and Rovittello, derives its name from the Sicilian word for “hot,” reflecting the unique thermodynamic energy retained by the region’s volcanic soil. Composed of 85% Nerello Mascalese and 15% Nerello Cappuccio, the grapes are hand-harvested and undergo a 24-hour cold soaking maceration, followed by seven days of skin contact during alcoholic fermentation. The wine then experiences spontaneous malolactic fermentation and is aged for three months in 30hl barrels, with an annual production of 2,500 cases.
