Domaine Jean Féry & Fils is a family-run winery located in the beautiful village of Échevronne between Beaune and Nuits-Saint- Georges. The vineyards span over 14 hectares (34 acres) from the north to the south of Burgundy in famous appellations.
Jean-Louis took over his parents' estate in 1988 and made his childhood dream come true: providing the family estate with the means to develop further by performing the necessary construction work and investments while purchasing new vineyards. He now dedicates all his time to the vineyards. The vineyards are farmed according the principles of organic farming (they have been certified by ECOCERT since 2011), which requires a great deal of dedication and physical labor. Jean-Louis organizes the work of the laborers in every plot of the estate all year long. His unwavering love for Burgundy’s terroirs leads him to constantly acquire new vineyards in order to enrich the estate’s range of growing areas... and to give everyone pleasure...
Domaine Féry crafts and ages the wines according to traditional methods, with care and with all due respect for the terroirs, avoiding unnecessary mechanized handling and attending to the biological processes that occur in the vats. They never hesitate to innovate with new techniques or equipment, such as "new barrels if they can prove to be beneficial to the wine: quality is priceless." The estate is now in the hands of Jean-Louis’s sons, Frédéric and Laurent Féry.
Here we have a wine from Féry with a wonderful history and terroir. The name Hautes-Côtes de Beaune La Come des Amoureuses has a romantic history taken directly from the valley where young people from the villages of Échevronne, Pernand-Vergelesses, and Aloxe-Corton once met for loving encounters.
The grapes come from three unique vineyard sites on the highest peaks of the Côte de Beaune, where the limestone and clay soils give the wine a mineral-rich and fresh character. The grapes from each vineyard are vinified separately before being blended in a steel tank. The vinification for the white wines involves pressing whole bunches immediately to avoid the risk of oxidation. The juice is kept cold and left to “settle” for 24 hours before being transferred to oak barrels (50% new oak) to begin fermentation under temperature-controlled conditions. The lees are stirred twice a month until the end of malolactic fermentation. 80% of the wine is then aged in French 228-liter oak barrels and 20% is aged in Amfora. The wines are then blended and left to rest for another four months in steel tanks. The wine is then clarified with bentonite clay and undergoes only a very light filtration before bottling.

Lovely, pure aromas of minerals, lime and orange blossom lead to more of the same in the mouth with generous fruit flavor, fine acidity and a mouthwatering yet round finish. Classic and terroir-driven with personality, this punches well above an average Bourgogne Blanc, it is from a special site with ancient history. Drink young or age for up to 7 years. It goes perfectly with elegant fish dishes, fresh cheeses and classic roasted chicken.
