Bibineishvili Wines has been producing bio-organic wine for many years. Employing modern technology along with traditional growing practices, Binineishvili Wines produces a variety of wines with elevated tastes from the village of Erge in the Adjara Municipality in the region of Khelvachauri in Georgia. They are also a member of the Natural Wine Association. Bibineishvili Wines is located at the meeting of the Chorokhi and Jochostskali rivers, just to the east of the Black Sea in the Adjara region. This environment by the sea offers humid air and a fertile river watershed, cultivating healthy winemaking conditions.
Calling themselves the birthplace of winemaking (since they have been making wine for over 8000 years), the country of Georgia is home to more than 500 varieties of indigenous grapes—roughly one-sixth of the world’s total grape varieties. Georgia’s vineyards include endangered vines found nowhere else on earth. Today, some vineyards feature living vine libraries, where visitors can sample rare grapes.
This unique wine here is a dry white wine, yet it is made from a red grape : CHKHAVERI. This variety, used mainly for rosé wines, is mostly found in the Guria and Adjara regions of western Georgia. During the early period of Georgian viticulture, Chkhaveri vines were trained to grow up trees—a process known as maghlari. Late ripening and low yielding, Chkhaveri grapes are typically harvested in the second half of November. Chkhaveri grapes produce soft, harmonious wines with aromas of white fruits and moderate to high degrees of alcohol. This delightful white aged in stainless steel clocks in at 11.5% alcohol. Unfiltered. Only 1200 bottles produced (that's only 100 cases).

Incredibly delicious and very interesting! It has this salty mineral style with apricot skin and yellow plum flavors. Made near the border of Turkey, this Georgian white will pair incredibly with seafood. Deceivingly weighty without tasting heavy. And very fresh although it is a 2018. A must-try for white wine connoisseurs even though it is a white made from the juice of a red grape!
