The story of the Salvestrin Winery began when Italian immigrants John and Emma Salvestrin fell in love with St. Helena while visiting friends in the early 1920s. In 1932 they purchased a portion of the historic Crane Ranch, including the Victorian home of Dr. Crane. With the repeal of prohibition in 1933, they started selling grapes as the wine industry began to grow again. Ed Salvestrin, who grew up on the family vineyard, continued to grow quality grapes through the 60s, 70s and 80s preserving the family legacy for future generations. He still lives on site and frequently tends to his fruit trees (apples, pomegranates, grapefruit, persimmon) when he’s not helping out in the vineyard. In 1987, Rich Salvestrin completed his degree in viticulture from Fresno State University. He returned to the family vineyard to help farm and also to expand the family's grape growing business to include winemaking. 1994 was the inaugural vintage of Salvestrin Cabernet Sauvignon and in 2001 the estate winery was constructed amongst the family vines. Today, the fourth generation Salvestrin girls are growing up on the family vineyard.
The vineyard at Salvestrin has been farmed sustainably for over eighty years. Holistic guidelines have been utilized since 2006. Fruit trees planted around the property provide a habitat for beneficial insects. Nutrient composts and cover crops increase the biodiversity of the soil and improve tilth. Soil cultivation in the spring aids in achieving vine balance and decreases the need for irrigation. The vineyard at Salvestrin is certified Napa Green with for both Winery and Vineyard and has fish friendly farming practices.
Salvestrin's Three D is a unique selection of the family's finest Cabernet barrels of the vintage from the famous Dr. Crane vineyard. Made in honor of their three daughters: Hannah, Emma and Tessa, of 100% estate-grown Cabernet Sauvignon, clones 8 and 169. This prized 3D Cabernet spends almost three years aging in new French oak barrels. Meticulously layered, aromas of plum, brambly fruit, fresh tobacco leaf, and a hint of clove are featured. The palate boasts fine grained, chalky tannins that surround a silky, voluptuous middle. Seamless and mouth-coating, wild raspberry and black olive reveal themselves on the back end of the lingering finish. Bottled unfined and unfiltered.

Deep garnet-purple in color, the 2015 Cabernet Sauvignon 3D Dr. Crane opens with licorice, violets and tilled soil over nuances of mossy bark, cassis, and warm plums. Medium to full-bodied, the palate has firm, grainy tannins and is elegant and polished, finishing long and layered.

Even more saturated purple-colored, the 2015 Cabernet Sauvignon Three D Dr. Crane Vineyard is a considerable step up. Rocking levels of blackcurrants, toasted spice, graphite, dried flowers, and tobacco all flow to a ripe, powerful Cabernet Sauvignon that has a stacked mid-palate, fine tannins, and a big finish. This beauty needs short-term cellaring and will cruise in cold cellars for 2+ decades.

A 100% varietal wine aged 34 months in 100% new French oak, this wine offers intensity and savory herbaceousness, hearty, dense flavors that are flecked in coconut and a lasting note of dark chocolate. Along the way are elements of currant and cassis that accent the whole.
