Ichinokura Himezen Ume Sake
Category | Sake |
Region | Japan |
Brand | Ichinokura |
Ichinokura is located in Matsuyama, Miyagi Prefecture, in the mountains outside Osaki City. Situated in the middle of a forest, it is blessed with clean, fresh air, abundant underground water and rice suitable for sake making. It was founded in 1973 by the merger of four rival Miyagi brewing families, each with a 100-300 years of history. The resulting enterprise was named “One” (Ichi) “Brewery” (Kura), and dedicated their efforts to the production of the finest expression of Miyagi sake. Miyagi Prefecture is Japan’s breadbasket, and grows some of the world’s finest sake rice. Ichinokura uses a minimum of 90% local rice in their sakes, which balance tradition with modern ingenuity.
This Umeshu (plum infused liqueur) is made from low ABV sake and concentrated plum juice. This is quite rare, as most umeshu is made from a base of distilled shochu, rather than brewed sake. Made with hand-picked local yellow-ripe plums from Miyagi prefecture, allowing for unique elegant aromas, a mild, balanced texture, and refreshing acidity. It’s a totally unique, delicious, low ABV beverage!
