Chardonnay is the grape variety used to produce Chassagne Montrachet's famous white wines grown on limestone soil mixed with brown clay. Drouhin uses a careful balance between tradition and modern techniques in vineyard management and vinification, including organic and biodynamic principles, and maintaining their own green nursery. Ploughing and leaf removal are the only methods used. The whole harvest is picked by hand. The grapes are gently and slowly pressed. The juice settles down for a few hours and is then placed in oak barrels. The fermentation starts naturally, with no yeast inoculation. The malolactic fermentation is always led to its natural completion. The wine matures in small oak barrels for nine-to-ten months and receives all of the necessary care before bottling. The percentage of new oak on the Chassagne Montrachet varies with each vintage but it never exceeds 40% so that the oak cannot dominate the fruit.
Traditionally served in Burgundy with white meats (turkey, veal, chicken) or white fishes in delicate sauces. Chassagne-Montrachet always has a beautiful golden hue. On the nose, there are often delicate nuances of pear, vanilla and almond flavors. Round and ample on the palate, the wine has length and complexity.

Generous ripe citrus and pineapple with a touch of vanilla, the healthy tannins nicely supporting the generous body. Robust but well-balanced finish. Drink or hold.

The 2019 Chassagne-Montrachet Village has a bouquet similar to the Puligny 2019, quite terse at first, reserved, then opening gradually with hints of yellow fruit and white flowers. The palate is well balanced with a rounded texture, hints of apricot and yellow plum, and some baking powder notes toward the finish. Fine length here, and plenty of charm to boot.

Here too there is fine density to the less refined but more powerful middle weight flavors that possess the same solid complexity on the mildly rustic finale.
