In 1993, three of Napa Valley’s most storied winemakers, Helen Turley, Bob Levy and Randy Dunn, gathered around the blending table with winery founder, Jayson Pahlmeyer. They mused about the results of the exceptional 1992 vintage and pondered over what to do with a few unused barrels from their Pahlmeyer Proprietary Red Blend. They immediately recognized the potential for another extraordinary wine that would complement the quality of Pahlmeyer. Jayson by Pahlmeyer follows the tradition of Pahlmeyer. Every vintage is meticulously made with the attention to detail for which Pahlmeyer is known and trusted.
This Jayson Sauvignon Blanc is made of 100% Sauvignon Blanc, hand-sorted and gently pressed as whole clusters. The wine was fermented and aged in neutral French oak barrels to highlight the beautiful acidity of the fruit, while enhancing its complexity. The vintage was barrel fermented in neutral oak. Winemaker Jennifer Williams extended the contact with the lees to impart a richer texture, which is balanced by the bright acidity of the wine.
Look for aromas of lime verbena and orange blossom and hints of lemongrass radiate from the glass. The acidity matched with the texture create a palate that is crisp, yet long and juicy. On the finish, layers of pineapple and apricot play off a slight hint of green apple acidity. This Sauvignon Blanc pairs beautifully with goat's milk cheeses, lemon chicken and shrimp cocktail.
