The long, storied history of the Portuguese fishing industry is well respected around the world. Unmatched in quality, these outstanding sardines, Pilchardus Walbaum are collected from the waters just off the shore of Portugal. They are caught between May and November, when sardines are at their best. Only fresh fish are allowed. The process involves manual cleaning and very careful handling, followed by the traditional cooking in a grill oven before being canned. Serve these delicious sardines as hors d'oeuvres during cocktail hour or as an appetizer before a meal or create your own 'Jacques Pepin' Sardine salad with fresh Italian parsley, shredded carrots, thinly sliced elephant garlic, coarse sea salt, lots of fresh lemon juice and the sardines...
