Le Pico is an award-winning cheese from the Périgord region of southwest France, near Cahors, Bergerac and Bordeaux. Germain specializes in authentic cheeses from specific French terroirs, this one made from goat’s milk. Under its slightly downy rind hides a center which evolves as this little round ages in its little wood box. Le Pico starts off mild, with a creamy surface and a firm, melty center, and becomes more gooey and luscious with time. It is also versatile for pairing with wine. You may serve it with a crisp, dry, clean Sauvignon Blanc from Bordeaux or Entre de Mers, or even with a hearty red Bordeaux.
