Trefethen Cabernet Sauvignon 2015
Trefethen's Cabernet Sauvignon vines are planted in the gravelly soils of their estate vineyard, Main Ranch, in the Oak Knoll District of Napa Valley. These well-drained soils, combined with limited yields and a moderate climate, produce Cabernet Sauvignon fruit with complex flavors and a special brightness on the palate. The 2015, commemorating the winery's 50th anniversary, is a blend of 85% Cabernet Sauvignon, 6% Petit Verdot, 5% Merlot and 4% Malbec. Aged 18 months in (49% new) 52% French, 24% American, 24% Hungarian oak.
This elegant wine pairs best with fine cuts of beef or venison. A simple complement to the meat can be fresh tarragon or black pepper. Other favorite recipes include wine braised short ribs and grilled beef tenderloin with a mushroom sauce. For something unexpected and delightful, pair this wine with rare Ahi tuna in a peppercorn crust.
