Montagny is the southernmost village in the Cote Chalonnais, with Mercurey and Rully to its north, and it has the perfect soils and climate for producing high quality white wines. This lovely example is from the 7th generation Faiveley family. Vinified half in tank and half in barrel to stay fresh and elegant, look for aromas of ripe citrus, croissant, pear and minerals with nice body and lively style.
Domaine Faiveley combines the principles of modern winemaking methods with the time honored traditions that have been practiced for hundreds of years in their 19th century cellars. Each terroir and each vintage, benefits from special attention which makes the cuvées unique. Each bottle therefore becomes the faithful reflection of its terroir. The grapes are hand-harvested and pressed and vinified on site in Faiveley’s cellars in Mercurey. Following fermentation the wines are transported to the main cellars in Nuits-St Georges for aging. Aging takes place of a period of 10-12 months in a combination of neutral tank and oak barrels.
We paired this perfect expression of Montagny with Duck Foie Gras pâté on petite toasts along with shrimp cocktail in lemony aioli dipping sauce. Del
