Grower and winemaker Frédéric Esmonin works with his father André and mother Michelle – and cousin Sylvie Esmonin. André had previously sold all the grapes of the domaine to high quality négoce such as Drouhin, Jadot and Leroy. Starting in 1988 they began to commercialize their own bottles. In the vineyards they work as ‘lutte raissonée’ (sustainable agriculture) and regularly plough their soils. There have been no herbicides at the domaine for over ten years though they use one insecticide which is accepted as ‘bio’. The wines are made with 100% destemmed grapes, cold macerated for 4-5 days before the fermentation begins. As much as 60% new oak is used on each wine depending on the vineyard, but the wines don't taste oaky. Round, ripe, plump and charming, this 2015 has delicious flavors of red cherry, sweet plum and hints of vanilla. Pair with salmon, chicken and lamb, or French cheeses such as Comté Gruyere & Fromage d’Affinois.
