Château Hyot has such pretty aromas of dark cherries, plums, spices and smoke with mildly earthy characteristics. The wine possesses a medium to full body and is well balanced showing lovely mix of fruit and acidity. Wonderful flavors of plums, spices and fresh spring florals continue to persist all the way through the finish. A blend of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon made from vines averaging 40 years planted in gravel and clay-limestone soils, all of the grapes are harvested by hand. 7th generation winemaker Amélie Aubert seeks a terroir-driven wine, combining sophisticated structure with balance and freshness. A deep respect for the vine is the driving force behind her philosophy and approach to making wine. "Quality is not possible with quantity", she explains, "and I want my wine to capture the essence of this fantastic terroir in its moderate oceanic climate."
"The zone of Cotes de Bordeaux seemed to really excel in 2018 at the above level of quality wines…They are now meeting the quality of many grand cru wines from St. Emilion" - James Suckling. This great little wine is made by arguably the world’s best, and most expensive wine consultant (Michel Rolland), hired by one of the oldest and most successful families in Saint-Émilion on the Right Bank (the Aubert family).

Plenty of espresso flavors, dark fruit and hints of dried flowers. The palate is medium-to full-bodied with a lovely core of fruit, accessible tannins and a clean, lovely finish. Drink now or hold.

From the slopes just west of Castillon, this is a ripe Merlot-dominated wine. A core of tannins and juicy acidity have combined into a savory wine that will be ready from 2023
