Les Pavots is Peter Michael’s flagship blend of red Bordeaux varietals from their Knights Valley Estate. While the blend varies from vintage to vintage, typically it is 2/3 Cabernet Sauvignon with roughly equal parts Cabernet Franc and Merlot and a touch of Petit Verdot. Les Pavots captures an elegant refined expression of the terroir embracing the full spectrum of Cabernet family varietal expression with its trademark touch of herbes de provence. The name translates to “The Poppies” and is named after the California poppies that grow wild on the Peter Michael estate and are the inspiration for the winery’s logo. Les Pavots is located high above Knights Valley in Eastern Sonoma County. It was planted: 1989-1999 with 33 acres of Cabernet Sauvignon, 4 acres of Cabernet Franc, 11 acres of Merlot and 1 acre of Petit Verdot. The elevation is 1,000 – 1,400 feet and the soil is of rocky volcanic-origin.

'There's nothing that the Peter Michael winery does that is not admirable. Consider that they work with Chardonnay, Pinot Noir, Sauvignon Blanc and Semillon as well as Cabernet Sauvignon and Cabernet Franc, they produce world-class wines from all of these varietals, and they do it from Knight's Valley and the Sonoma Coast. Of course, they have had some fabulous winemakers pass through, including the likes of Helen Turley and Mark Aubert, Luc Morlet and now his brother, Nicolas Morlet. Nevertheless, much of the credit has to go to Sir Peter Michael, the owner, who gives these people carte blanche, and expects their very best.' Robert M. Parker Jr.

Wine AdvocateBlended of 60% Cabernet Sauvignon, 18% Cabernet Franc, 15% Merlot and 7% Petit Verdot, the 2015 Les Pavots Proprietary Red Wine is scented of crème de cassis, blueberries and baking spices with hints of chocolate box, black earth and cigar box. Medium to full-bodied, the palate simply sings with black fruit preserves and spicy layers, supported by chewy tannins and plenty of freshness, finishing long. 2,870 cases were made.

Wine SpectatorRemarkably complex and nuanced, with a firm mix of cedary oak and mocha notes and tight dark berry, anise, gravel and spice flavors, finishing long and persistent. Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. Best from 2021 through 2032. 2,870 cases made.
