Named for the age-old practice of toasting barrel heads and staves to impart creamy, oaky flavors, Toasted Head was founded in 1995, in the Dunnigan Hills of Yolo County, located just east of Napa. Look for aromas of vanilla, butterscotch, white peach, and Asian pear. On the palate, creamy toast, peach and caramel flavors are complemented by a ripe, fresh finish. Serve with shrimp, chicken, creamy pasta and buttery cheeses, such Fromage d’Affinois, Langa La Tur and Delice de Bourgogne.
