The 'Signature' Cabernet Sauvignon has been Chappellet's flagship wine for more than three decades. It is the benchmark for the Chappellet's long-lived, hillside winemaking tradition; full of structure and ageing potential, yet seductively forward in its concentrated varietal character, the Signature Cab is a must-have. California collectors covet vintages from the 1970's, 1980's and 1990's, because unlike many of Chappellet's neighbors, their wines still improve after 10+ years, sometimes even 20+ years.

Opening with expressive notes of blackberry, cherry and cassis, the wine is full-bodied and rich. Hints of chocolate and espresso layer with spicy oak for added complexity. Smooth tannins infused with ripe sweet fruit create a lush, supple texture. Rich waves of berry, spice and herbs create a lasting impression of finesse and structure in this Cabernet. Serve with traditional steaks topped with Boursin cheese for a twist, roast leg of Lamb with rosemary, roasted rack of Venison with sage and shallots with dried cranberry gravy, or with spiced Venison steaks with Red Cabbage Confit and Red Wine Sauce.

Wine AdvocateThe 2016 Cabernet Sauvignon Signature has a very deep garnet-purple color and opens with wonderfully expressive notes of warm cassis, baked plums, black raspberries and kirsch with suggestions of underbrush, lilacs and chocolate box. Medium to full-bodied, the palate reveals layers of red and black berries with stunning freshness and an approachable, grainy texture, finishing long and earthy.

Wine EnthusiastThis is made entirely from mountain fruit along the eastern hills of the Napa Valley, including the producer's estate. It is blended with 12% Petit Verdot and 9% Malbec. Smoky oak, clove and tobacco accent red fruit and a savory bottom line of cedar and sage. It's rich but well behaved.
