Vincent Dauvissat is one of Chablis' most prestigious and sought-after estates. He farms nearly 23 acres of meticulously kept vineyards, all in Premier Cru appellations. These vines are splendidly sited on hillsides underlain by Jurassic limestone which give the wines incredible terroir. Yields are low, all picking is done by hand and the wines are known to age for decades. A loyal following among France's most esteemed restaurateurs sharply limits the availability of Dauvissat wines for export so we are always happy to acquire small quantities of new vins.

Wine AdvocateThe 2015 Chablis 1Er Cru Vaillons is more tightly wound on the nose compared to the Séchet, but it eventually reveals scents of lemon curd, white flowers and flint scents. The palate is very well balanced, caressing in the mouth, again quite spicy with stem ginger and white pepper generously lavished on the tensile finish, with dried honey smeared over the aftertaste. This is doubtlessly a classy Vaillon, although here I found it eclipsed by the Séchet.
