The average age of his vines are 35+ years old. All vinification is done in temperature controlled stainless steel tank, with 4-6 month aging on fine lees with minimal batonnage.
Made of 100% Sauvignon Blanc from the famed village of Chavignol, grown on caillottes (chalky white pebbles), with clay and limestone soils, and 30+ year vines, this is made with indigenous yeasts, and indigenous yeasts, and fermented and aged in tank (100% unoaked).
