Todd Anderson is a big fan of his Chardonnay because it has proven to be one of the longest-lived Chardonnays in California. He pulls bottles from his cellar with 10, 15 even 20 years of bottle age, and finds the wines to still be fresh, rich and balanced. Unlike most other California Chardonnay producers, Conn Valley actually inhibits malolactic fermentation, so the aromatics and acidity levels are not muted or blocked out by buttery notes. The palate is bright with crisp acidity, but isn't lean due to barrel fermentation in 100% French oak and lees exposure. Green apple and citrus mingle with toasty notes from the barrel. Serve with salmon, poached halibut, lobster and chicken in Dijon sauces.
