Founded in 2005, Joto’s mission is to serve as a bridge between Japanese artisanal saké and the American market. They aim to bring the world of artisanal saké to life in a simple yet authentic way. Joto is Japanese for 'highest level' and describes the makers of their saké and aspirations as their importer. Their jizake (local) breweries are located throughout Japan, producing saké in small batches with locally-raised indigenous rice varieties, offering flavors and styles ideal for a range of cuisines. This limited release junmai ginjo is versatile for new and seasoned sake drinkers alike. With a seimaibuai of 55%, it is soft and light on the palate, with a delightful fruitiness characterized by peaches, strawberries and papaya. It finishes with a white pepper spice. Best served chilled, it complements light foods like salad, sushi and sashimi. It also cools down spicy Asian foods or very salty and rich foods.
