The lightest and freshest, Cuvee Amphibolite, is bottled without any chaptalization or filtration. Hard, rocky orthogneiss soils are used to produce the fatter Hermine d'Or, which carries the seal of approval of the society of the same name, and the old-vine Fief du Breuil wines.
