The Hedonist employs traditional methods of winemaking, led by esteemed Australian winemaker Walter Clappis. Using biodynamic principles in the vineyard and winery, through the use of open fermentation and small basket presses, Clappis practices the 'less is more' theory of winemaking believing that good wines are 'made in the vineyard'. Fermentation is usually completed in small oak barrels to increase the overall complexity and integration of oak through the wine. Walter Clappis has been making wine for 30 years and is the only winemaker to have ever won the Dan Murphy Trophy 3 times.
