Justin Winery is family owned & operated, and makes estate grown wines in Paso Robles in the Central Coast area of California. The property was founded in 1981 by Justin and Deborah Baldwin when they planted their 160 acre property to the major Bordeaux varietals and dreamed of making great Cabernet-based reds. We met Justin Baldwin in those early days of the 1980's when he was one of less than 10 wineries in the area, and even retailers were asking him, "Why are you making wine in Paso Robles? What about Napa?" But ironically, the region’s first grapes were planted in 1779 by Franciscan missionaries and today are home to the third highest concentration of wineries in the United States. Today, Justin has built a reputation for world class wines that reflect the unique soils of Paso Robles and the stunning concentrated fruit of his Bordeaux-style blends.
This Cabernet was aged for 18 months in oak, 25% of which was new, and has aromas of black cherry, plum and an assortment of spice, vanilla and toasty oak. A soft, fruit forward entry evolves into a lush, opulent mouth feel filled with black fruit, earth and spicy characters. Hints of vanilla and cedar combine with a soft, velvet texture on the finish.
