Vidal is an aromatic and hardy French hybrid which is ideal for making Canadian Icewine. Not only is it a long and steady ripener, it has rich, full aromas and flavors balanced by a firm acidity. Icewines made from Vidal are noted for their complexities of honey, tangerine, apricot and pineapple, and when Vidal is aged in oak it takes on rich overtones of vanilla, almonds and fresh baked bread. Vidal Icewine works beautifully in a glaze for caramelized grilled pork roast or as an accompaniment to fresh summer berries with cream, a pear tart, apple or peach pastries, or with cheeses and pâté.
